A Taste of India
Enjoying Indian food involves more than just relishing the taste. This delightful cuisine must be enjoyed with all the senses. Not least of which is the sense of touch.
“If you really want to enjoy Indian food, you have to eat with your hands,” says Pravin Kapoor, owner of a local Indian café. So I put down my fork, rolled up my sleeves, and tore off a bite of roast chicken with my fingers. Kapoor was right. There was something deeply gratifying about eating with my hand.
I had come to Kapoor’s café in search of an authentic Indian meal, and this restaurant certainly did not disappoint.
My meal began with two delectable chicken dishes: murgh tandoori and murgh malai tikka, both roasted in a traditional tandoor oven. This clay, charcoal-burning oven imparted a rich, earthy flavor to the tender chicken. I dipped the murgh malai tikka in a cool mint chutney and savored the delicious, exotic taste. Even more delicious was the juicy meat and rich flavor of the murgh tandoori. |
